To make the cheesecake filling, add softened cream cheese, granulated sugar, and one large egg in a large bowl. Mix with electric mixer on medium speed until well blended. Set aside for pie filling.
On a lightly floured countertop or board, unroll two pre-made pie crusts. Set them aside for 10- 15 minutes to warm up to room temperature.
Using a 4" cookie cutter or the top of the jam jar lid, cut as many circular crusts as you can from both pie crusts. Cut approximately 6 from each pie crust.
Add a tablespoon of the cheesecake filling to the center of each circle and then top with a dollop the same size of our blueberry bourbon ginger jam.
Beat the egg and set aside.
Gently press down to adhere the two circles together around the edges. Gently press the edges together with a fork
Brush the edges of the circles with filling with the egg-wash, then top with a circle with the slits.
Line pies on parchment paper
Pre-heat oven to 400° & bake for 10-12 minutes, enjoy!
