PB & Strawberry Daiquiri Jam Bars 🍓
These bars make a great breakfast or treat that the whole family will love! Grab a jar of our Strawberry Daiquiri Jam (link is in our bio) & make them for your family! Don’t worry, there’s no liquor content in the jam.
Ingredients

1/2 Cup Strawberry Daiquiri Jam
1 1/4 cup cassava flour
3/4 cup old fashioned oats
1/2 tsp baking soda
1/2 tsp salt
1 egg
1 stick unsalted butter
6 Tbsp coconut sugar
1/3 cup peanut butter
1 tsp vanilla extract
Directions
Preheat oven to 375°.
Line an 8x8 inch baking dish with parchment paper and set aside.
Add Cream butter & sugar in a mixer. Add egg & beat until blended. Add vanilla & peanut butter and mix until well combined.
In a separate bowl, mix oats, flour, salt and baking soda. Slowly add the dry ingredients to the wet ingredients until dough forms. Reserve 1/3 of the dough for crumble topping. Press remaining dough into bottom of the baking dish, spreading evenly to the edges.
Spread jam over top of the dough. Use reserved dough & break into crumbles, then sprinkle over top of jam.
Bake for 20-25 minutes.
Cool completely, then remove from pan, lifting out the parchment paper and setting onto a cutting board. Cut into bars & serve.
