Peanut Butter & Strawberry Jam Stuffed French Toast

Start with 2 slices of brioche bread. Toast them lightly and spread peanut butter on one slice & strawberry daiquiri jam on the other. Sandwich them together. Next beat three eggs & add in a splash of milk & 1 tablespoon of cinnamon into a bowl. Take the brioche sandwich & add it to the bowl with the egg mixture. Flip it over & make sure it’s well coated. Place a frying pan on low heat and add 1 tablespoon of avocado oil. Once the oil is warm place the French toast on the pan and grill until golden brown. Flip over and grill the other side until golden brown.

Once the French toast has been fully cooked on both sides place the stuffed French toast on a plate and garnish with powdered sugar, fresh strawberries and maple syrup.
